Arugula and Watermelon Salad

This refreshing salad is perfect for a "foodie" dinner party where you want to serve something different from the traditional salads.  It combines interesting flavors, and looks beautiful on the plate.

Ingredients:

Arugula and Watermelon Salad

  • Arugula
  • Watermelon, Cut Into Bite-Sized Pieces
  • 1/3 Cup Balsamic Vinegar
  • Feta Cheese, Crumbled
  • Pine Nuts (Optional)

Directions:

  1. Bring the balsamic vinegar to a boil in a small saucepan.
  2. Lower heat slightly to keep simmering, stirring often, until the balsamic reduces to about half and has a syrupy consistency. 
  3. Place arugula on a plate, top with watermelon pieces, feta, and pine nuts.
  4. Drizzle the balsamic reduction over the top of the salad, and serve!

Tip: The instructions in step one and two are to make a balsamic reduction.  You can also buy one at the store and skip these steps.  But it's so easy to do at home on the fly, and keeps one less bottle from cluttering your pantry!
