</p><p>You just couldn&#8217;t resist &#8230;</p>
<p>It&#8217;s so hot outside.  And the watermelon looked soooo good.</p>
<p>Plus it was only $3.99 for an entire one!</p>
<p>But the weekend is over, and the novelty of eating watermelon on the patio has come and gone.</p>
<p>It breaks your heart to think of wasting over half of the thing.  Even if it was cheap!</p>
<p>Well waste not my deal-loving friend!  I have a few watermelon recipes for you today &#8230;<span id="more-2194"></span></p>

<p>I found these <a title="Watermelon Cocktails" href="http://whattocookwhen.com/watermelon-cocktails/" target="_self">watermelon cocktail</a> ideas in the July/August 2010 issue of Food Network Magazine and found them quite refreshing!  We&#8217;re talking watermelon cap cods, frozen watermlon margaritas, and watermelon mojitos.</p>
<p>Next up, a salad &#8230;</p>
<p>While this refreshing watermelon salad may sound odd at first, you&#8217;ll be pleasantly surprised at how much you enjoy it in the end.  It combines interesting flavors, and looks beautiful on the plate.  So along with using up leftover watermelon, it&#8217;s the perfect salad for dinner parties where you want something a little &#8220;different.&#8221;</p>
<p>And finally, a recipe a little &#8220;out there&#8221; for a change in case you&#8217;re feeling daring&#8230;</p>
<p>I haven&#8217;t tried it myself yet, so I&#8217;m hesitant to post it, but i just couldn&#8217;t resist.  The recipe is for a <a title="Spicy Watermelon Soup with Crabmeat" href="http://whattocookwhen.com/soups/spicy-watermelon-soup-with-crabmeat/" target="_self">spicy watermelon soup with crabmeat</a> that I&#8217;ve been meaning to try.  So if you beat me to it, let me know how it is!</p>

<p>The combination of honey and dijon mustard give this salmon a nice rich taste, and the baked breadcrumb topping serves as the perfect finish.  It&#8217;s a wonderful way to turn a regular weeknight dinner into something special.</p>
<p>If you&#8217;ve been to WhatToCookWhen.com before, you know I&#8217;m not a huge fan of salmon.  But I know that it&#8217;s good for you, and my hubby loves it, so I&#8217;m always searching for the best recipes to enhance (i.e. mask) the salmon.</p>

<p>You had a group of great friends visiting from out of town.</p>
<p>Partying out on the town, relaxing on the lake, taking in the sites &#8230; </p>
<p>But tomorrow they&#8217;re leaving bright and early to start their long drive home. And you want to send them off after a good breakfast.<span id="more-2092"></span></p>
<p>Something that will hold them over until lunch.</p>
<p>But with them leaving so early, you know you&#8217;re not going to be able to do much cooking in the morning.</p>
<p>Plus with so many people getting ready in the morning, you&#8217;ll hardly be able to all sit down at the same time to eat.</p>
<p>You&#8217;re going to need something that they can help themselves to.</p>

<p>I love these things!  They&#8217;re great for feeding big groups, and can easily be prepared the morning of if you have time, or the night before&#8230;</p>
<p>Simply bake it the night before, and store it in the fridge.  Then as people wake up and get ready, they can cut themselves a piece, heat it up in the microwave, and enjoy a hearty breakfast with little fuss. (And without going through a drive thru!)</p>

		<description><![CDATA[You're going to be short on time, and two glasses of wine in while cooking tonight. Prep this 3-course meal before you leave, and come back to a lovely dinner and a stress-free night.]]></description>

</p><p>You&#8217;re planning to have people over for dinner &#8230; AFTER going to a winery for a tasting.</p>
<p>That&#8217;s right &#8211; you&#8217;ll be required to cook AFTER already having drank a couple glasses of wine (since you&#8217;ll probably have a full glass of your favorite from the tasting while you take in the view of the vines!).</p>
<p>And you&#8217;ll be cooking for people who have already had two glasses of wine, and ready for dinner!<span id="more-2081"></span></p>
<p>You want to serve a nice meal, to follow-up the lovely day you&#8217;ve enjoyed so far.</p>
<p>But it needs to be something that a. you can pre-prep earlier in the day, and b. you can pull together quickly once you all get to the house.</p>
<p>And while this is based on a true story, this recipe  line-up I came up with would be perfect for any dinner party where you don&#8217;t want to be in the kitchen cooking for too long. I&#8217;m talking about dinner situations like a small group, your boss is coming over for dinner, your in laws, the man (or woman!) of your dreams &#8230; you get the idea.</p>
<p>So back to the lineup &#8230;</p>
<p>This should go without staying, but make sure you set the table and set out all of your cooking utensils, dishes, and glasses before you leave. It will make for a MUCH easier time when you get back.</p>

Cook the bacon and store it in a ziploc bag after it&#8217;s cooled, and make the salad dressing. Once you arrive at the house, plate the salads and serve them up to your guests.  That will take the edge off while you continue on with the main course &#8230;</p>

Prep all of the medallions earlier in the day by slicing up the tenderloin, seasoning, and storing in the fridge.  Set out the sauce ingredients (there&#8217;s only a few!) and as many pans as you need &#8211; the amount will vary by the number of guests.  (Tip: When I&#8217;m making this in bulk, I use my largest skillet to make the sauce afterwards, and just increase the sauce ingredients as much as I need.  Don&#8217;t worry about making the sauce in all of the skillets.)  This meal goes from cooking to serving in under 15 minutes.</p>
