When you're looking to serve a special breakfast treat, or create a noteworthy Sunday brunch menu, this variation on the ever-popular french toast is sure to please.
Ingredients:
- ¼ Cup Chopped Pecans
- 2 Tbs Unsalted Butter
- ¼ Cup Brown Sugar
- 2 Large Bananas Peeled and Cut Into ½” Rounds
- 6 Eggs
- 1 1/2 Cup Low-Fat Milk
- 1 Tsp Vanilla Extract
- 1 Tbs Cinnamon
- 8 Slices Bread
Directions:
- In a skillet over medium heat, toast pecans until lightly browned. Set aside.
- Melt butter in a large skillet over medium-high heat.
- Add brown sugar and 2 tablespoons water and stir until sugar dissolves.
- Continue stirring until mixture is foamy, about 2 minutes.
- Add bananas and cook until tender, about 2 minute.
- Transfer to a small bowl and keep warm.
- In a large baking dish, mix egg, milk, vanilla extract, and cinnamon.
- Spray a griddle with cooking spray and place over medium heat.
- Dip bread in batter and thoroughly coat both sides.
- Place on hot griddle and cook until golden brown, about 2 to 3 minutes per side.
- Spoon equal amounts of banana mixture on 4 slices of french toast and top each with another slice.
- Cut and serve halves garnished with nuts.
