You Want to Eat Light this Week

It's ok, it happens to all of us.

You indulged a little too much over the past few weeks.

And this morning when you were getting ready for work, your pants were a *little* too snug in the waist.

Don't worry, I've still got you covered.  My next few posts will include healthy recipes, but still tasty so you won't feel deprived.

Whenever I'm feeling the need to eat better, I turn to healthy fish and veggies. 

And this tasty parmesan crusted orange roughy allows you to still feel like you're indulging, without all the extra calories and fat.  

So the next time you're feeling the need to lighten your load a tad, rest easy.  You've got the perfect recipe to start your week off on a high note.

Parmesan Crusted Orange Roughy

Ingredients:

Parmesan Crusted Orange Roughy

Parmesan Crusted Orange Roughy

  • 1 Egg
  • 1/4 Cup Milk
  • 1 Cup Dry Bread Crumbs
  • 1/3 Cup Grated Parmesan Cheese
  • 4 (4 oz) Orange Roughy Fillets

Directions:

  1. In a shallow bowl, beat egg and milk.
  2. In another shallow bowl, combine the bread crumbs and parmesan cheese.
  3. Dip fillets in egg mixture, then coat with crumb mixture.
  4. Place in a greased 13-in x 9-in x 2-in baking dish.
  5. Bake, uncovered, at 425 degrees F for 20-25 minutes, or until the fish flakes easily with a fork.
