But it's true ... these healthy peanut butter oatmeal cookies only have 57 calories a piece, along with 2 grams of protein. So along with enjoying them as a low-calorie sweet treat, you can also eat four of them for a quick breakfast when you're on the go and need a quick bite!
- 3 Egg Whites
- 1 Cup Packed Brown Sugar
- 1 Cup Peanut Butter (Can use reduced fat too)
- 1/2 Cup Unsweetened Applesauce
- 1/4 Cup Honey
- 2 Tsp Vanilla Extract
- 3 Cups Old-Fashioned Oats
- 1 Cup All-Purpose Flour
- 1 Cup Nonfat Dry Milk Powder
- 2 Tsp Baking Soda
Directions:
- In a mixing bowl, beat egg whites and brown sugar.
- Beat in peanut butter, applesauce, honey and vanilla.
- In a separate bowl, combine the oats, flour, milk powder and baking soda.
- Gradually add flour mixture to peanut butter mixture, mixing until combined.
- Coat nonstick baking sheets with cooking spray.
- Drop single tablespoons of cookie mixture 2 inches apart onto prepared baking sheets.
- Bake at 350 degrees F for 8-10 minutes or until golden brown.
- Remove to wire racks to cool.
