Chopped Wedge Salad

Enjoy all the flavors of a wedge salad, without any of the fuss that comes with eating one.

And as an added bonus, this salad features an awesome tangy dressing that pairs perfectly with deliciously simple ingredients.

Chopped Wedge Salad

  • 1 Cup Mayonnaise (My favorite is the kind made with real olive oil!)
  • 1/4 Cup Ketchup
  • 2 Tbs Horseradish
  • 2 Dashes Worcestershire Sauce
  • 6 Thick Strips Smoked Bacon, Cut Into Small Pieces
  • 1 Head Iceberg Lettuce
  • Cherry Tomatoes, Halved
  • 4 Scallions, Thinly Sliced
  • 1/2 Cup Crumbled Blue Cheese

Directions:

  1. Make the dressing: Whisk the mayonnaise, ketchup, horseradish, and Worcestershire sauce until smooth. (You can also do this by putting the ingredients into a container with a tight fitting lid, and shaking the heck out of it!)
  2. Cook the bacon in a skillet over medium heat until crispy, and then transfer to a paper-towel lined plate to drain.
  3. Chop the lettuce into bite-sized pieces, and toss with a little salad dressing in a serving bowl.
  4. Top with the tomatoes, scallions, bacon and blue cheese (if desired).
  5. Serve with the rest of the dressing on the side.
